The Ultimate Curry Dinner Game Plan

If there’s one game plan that will always be a dinner favorite, it’s got to be curry. A variety of proteins and vegetable options combine with rich, flavorful curry sauces for a dinner win, every time. Follow our Curry Gameplan Chart to customize your curry, tailored to your tastebuds.

 

In a large, heavy-bottomed pot, start with a quick saute of minced garlic and ginger in sesame oil over medium heat. Cook chicken thighs, cubes of tofu, or even get started on some beef short ribs (add 1 cup of beef stock to deglaze the pan and ensure even cooking when using beef). Transfer meats to a plate and drain any excess fat from the pot. Add leftover bushel vegetables like diced onion, chopped squash, cubed eggplant, or even winter greens and cook until slightly softened. Add cooked proteins back to the pot.

 

Whether you’re into spicy foods or you’d rather keep it mild, curry has a spectrum of options when it comes to heat levels. Go for a cooler massaman curry if you’re trying to please the whole family, or go straight for the green if you’re all about the fire! Simply pour your favorite curry sauce (we are all in for our Thai Fresh Authentic Thai Curries) and bring to a simmer.

 

Once your curry is heated through to your liking, you can stir in extra flavor bombs like fish sauce, soy sauce, lime zest and/or juice, more coconut milk (to make your curry more of a soup consistency), and fresh herbs like chopped cilantro or Thai basil.

 

Serve scoops of curry over your favorite grain blend, white or brown rice, or even rice noodles!

 

Jazz up your curry (and make it pretty for Instagram!) by topping your plate with crushed peanuts, fried shallots, chopped green onion, or slices of jalapeno or other chilies. Enjoy!
