Turnip the Beet: Beets with Dill, Lime, and Yogurt

Bushel Vegetables: beets, turnips, fennel, meyer lemon

If you’re into the Instant Pot, this recipe is for you! If you’re thinking one of the popular gadgets is waiting for you under the tree, you can still make this wedged beet salad by roasting the vegetables and tossing with fresh meyer lemon juice, chopped fennel fronds instead of dill, and good, local yogurt. Subtle and Sweet: Carrot and Fennel Soup

Bushel Vegetables: carrots, fennel, green onion, sweet potato, collards/kale/swiss chard

This gorgeous golden soup gets its silky texture from pureed potato (you can also substitute sweet potatoes!), carrots and a healthy dose of butter. The crunchy chestnut topper is a real stunner, but you could go for toasted pumpkin seeds or hazelnuts instead! Ravishing Radishes: Orange and Radish Salad with Pistachios

Bushel Vegetables: radish, turnip, grapefruit, orange, lettuce

You don’t have to serve all winter produce in a warm dish – this shaved radish salad with citrus segments and pistachios is a beautiful complement to any hearty main dish. If you have any leftover turnips, go ahead and thinly slice them into the salad. Toss with grapefruit or orange segments and top with pistachios. Recipe Credit: NYT Cooking
