Citrus Sweet Potatoes

Produce Box Vegetables: Sweet Potatoes, Orange and/or Meyer Lemon

“A mild orange glaze lets the taste of sweet potatoes shine through in this nut-topped side dish.” Incorporate more veggies in this dish by layering peeled slices of carrot amongst the sweet potatoes and add a garnish of fresh rosemary or thyme to finish the dish.

Green Garlic Soup Redux

Produce Box Vegetables: Green Garlic (Green Onions will also do!), Serve with a side of Collards (or Kale) with Mushrooms, or Steamed Broccoli

“This ultra creamy potato-based soup uses young green garlic, which is harvested in the spring before the bulbs have a chance to develop. If you can’t find it, substitute leeks instead.”
