Chicken, Mushroom, and Bok Choy Bowls

Produce Box Vegetables: Bok Choy (Or Kale or Spinach or Swiss Chard) and Mushrooms

“True to most stir-frying techniques, we separate the tough stems of the bok choy from the tender leaves and cook them first so that everything has just the right doneness. One large bok choy can stand in for the baby ones; be sure to trim off the wide, fibrous ends and cut the stems into thin slices.”

Roasted Carrots with Grapefruit and Goat Cheese

Produce Box Vegetables: Carrots, Citrus (Grapefruit or Oranges), Top with Radishes

“This recipe elevates the roasted carrot into serious party fare.  Or just make it for you and yours to enjoy anytime since carrots are always in season.  The unusual twist is the addition of grapefruit, which you can “supreme” if you like”

Sweet Potato Cauliflower Gratin with Crispy Sage Leaves

Produce Box Vegetables: Cauliflower (or Broccoli) and Sweet Potato
