Sweet Potato Bulgur Citrus Salad

Produce Box Vegetables: Sweet Potato, Oranges (or Tangerines), Top with: Diced Green Onions (or Green Garlic Greens), Diced Avocado 

“This sweet potato bulgur citrus salad is my wintery spin on tabbouleh, or something like it. In place of tomatoes and cucumbers I use roasted sweet potatoes, so the texture and colors are certainly different.”
