Tomatoes (1 lb), Eggplant (1 lb avg) or Onions (1-2 count), Butternut Squash (1 count), Mushrooms (1/2 lb avg), Lettuce (1 head), Sweet Corn (4 ears), Peaches (1 lb), Melon (1 count), Indian Cucumbers (2 count) or Slicing Cucumbers (2 count), Red Potatoes (1 lb) 

Week of July 16: Medium Produce Box

Okra (1 lb), Peaches (1 lb), Mushrooms (1/2 lb avg), Red Potatoes (1 lb), Sweet Peppers (1/2 lb avg) or Bell Peppers (2-3 count), Delicata Squash (2 count), Lettuce (1 head)

Maple- Mustard Roasted Chicken with Squash

Produce Box Vegetables: Butternut Squash (or Delicata Squash), Onions — Substitute: Cubed Potatoes or Cubed Eggplant for Brussels Sprouts

We give the large bone-in breasts a head start in the oven so they will be perfectly cooked by the time the vegetables are done. This cut is also rather juicy; you’ll want to drain off the liquid from the pan before adding the vegetables so they can caramelize evenly.”

Instant Pot Corn Chowder

Produce Box Vegetables: Red Potatoes, Corn —  Add: Chopped Sweet Peppers

Skillet Roasted Okra and Shrimp

Produce Box Vegetables: Okra, Tomatoes — Add: Sliced mushrooms

This “fast saute” is best over creamy grits or a fresh green salad. Add sliced mushrooms when searing okra to use up the rest of your Produce Box.
