Honey Ginger Tofu and Carrot Rice with Bok Choy

Produce Box Vegetables: Carrots, Bok Choy, Add: Radishes and Cucumber Slices to Garnish

“Now, go make this savory, delicious, Asian-inspired bowl of carrot rice – and don’t think twice about soy. And, if you don’t eat soy due to allergies or lifestyle limitations (ie you’re legume-free), replace the tofu with shrimp and the soy sauce with coconut aminos, if you prefer. Otherwise, this bowl is healthy, packed with immunity boosters like ginger and carrots.”

Kale Salad with Roasted Butternut Squash and Apples

Produce Box Vegetables: Kale (and/or Collards), Butternut Squash, Apples

“I used the roasted vegetable mixture from the Roasted Apple & Butternut Galette I posted ages ago — chunks of tender squash, sweet apples, and slivers of caramelized onions with a pinch of cinnamon. It’s so warm and cozy and substantial — perfect for fall or winter.”

Roasted Spaghetti Squash and Apples

Produce Box Vegetables: Apples, Spaghetti Squash

“This Spaghetti Squash & Apples recipe is so easy and only requires 6 ingredients. It makes a great side dish and an even better healthy dessert. Apple, brown sugar, and cinnamon give it just the right amount of sweetness.”
