Large Produce Box: Apples (1 lb avg), Cucumbers (1 lb avg), Eggplant (1-2 count), Lettuce (1 head), Pea Shoots or Bok Choy (1 bunch), Persimmons (1 lb) or Pears (1 lb), Pumpkin or Winter Squash (1 count), Summer Squash (1 lb avg) or Okra (1 lb avg), Sweet Potatoes (1 lb avg), White Salad Turnips (1 bunch) or Salad Radish (1 bunch), Sweet Peppers (1 lb avg) or Shishito Peppers (1/2 lb avg)

Winter Squash Grain Bowl with Lemon Tahini Sauce

Produce Box Vegetables: Pumpkin or Winter Squash or Sweet Potatoes, Substitute: Diced Apple for Pomegranate Seeds, Top with: Pea Shoots

“This bowl is filled with acorn squash (any skin-on squash will work) and Brussels sprouts that are roasted with oil, maple syrup, mustard and spices. They come out of the oven perfectly browned, a little sweet and plenty spicy. If you leave the dressing off until right before serving, this salad makes fantastic leftovers”
