Classic broccoli casserole, without all of the junk! Swap rice for protein-rich quinoa and canned condensed soup for real deal cheesy goodness. You can also toss in some wilted greens like spinach, kale, collards or chard to bulk up the veggies in this recipe. Who can resist ramen during a cold front? This cozy bowl is filled to the brim with noodles and complemented with fresh turnips and chopped bok choy. Garnish with beautiful pea shoots, shredded carrots, and chopped onions to use up the extra bushel goods.
