This Week’s Use Your Produce Box

Each week, we take the time to list out all of the possible produce items that you get in your delivery and translate them into recipe ideas for your meal planning inspiration. If you ever find yourself with too many apples, or no idea what to do with radishes, you can always message us on Facebook or Instagram to chat with a Farmhouse employee. We will get back to you with recipe ideas, meal prep guidance, or just a friendly hello!

Sweet Potato Bulgur Citrus Salad

Produce Box Vegetables: Sweet Potato, Oranges (or Tangerines), Top with: Diced Green Onions (or Green Garlic Greens), Diced Avocado

“This sweet potato bulgur citrus salad is my wintery spin on tabbouleh, or something like it. In place of tomatoes and cucumbers I use roasted sweet potatoes, so the texture and colors are certainly different.”

Cauliflower & Kale Frittata

Produce Box Vegetables: Broccoli (Substitute for cauliflower), Kale/Swiss Chard/Spinach

“Inspired by traditional Spanish tortillas made with potatoes, this healthy frittata recipe swaps potatoes for low-carb cauliflower. Serve it along with kale (or your favorite greens) for brunch or an easy breakfast-for-dinner.”

Creamy Coconut Carrot Soup with Avocado and Toasted Quinoa

Produce Box Vegetables: Carrot, Avocado

“This creamy soup can be served hot or chilled, and is a welcome break from its heavier soup counterparts. Bright orange in color and served with ripe avocado, it’s the perfect dish.”
