Bowl ‘o’ Noodles: Sesame-Ginger Daikon Noodle Soup with Bok Choy, Snow Peas, and Shiitake Mushrooms

Bushel Vegetables: daikon, green onion, bok choy, broccoli

Did you get some new toys for the kitchen for the holidays? If you were lucky enough to be gifted a spiralizer, this recipe is for you! If not, you can still make twirls of daikon noodles with a humble vegetable peeler. Use a paring knife to cut the strips into thin noodles (they don’t have to be perfect!) and proceed with the recipe. In addition to chopped bok choy and mushrooms, skip the snow peas (they’re out of season) and sub for small pieces of broccoli and chopped green onions to garnish. Recipe Credit: Inspiralized


Caramelized and Crispy: Pan-Roasted Sweet Potatoes and Fennel

Bushel Vegetables: fennel, cauliflower, sweet potato

You can roast vegetables, but then you can roast and caramelize vegetables. Borrow some help from brown sugar, ground mace, and a good bit of olive oil to get that good crust on the sweet potato and fennel bits (you could also add cauliflower florets here as well). An extra tip: preheat the pan while the oven is preheating – the ripping hot pan will create a beautiful crust for a burst of texture and flavor. Recipe Credit: Food and Wine


Pack in the Vitamins: Kale Citrus Salad

Bushel Vegetables: kale/collards/spinach, apples, grapefruit/orange, lettuce

It’s time for a good food detox, starting with this vibrant salad. Massaged kale (or you could go for collards or spinach) is topped with chopped apples, segmented citrus, and sliced red onion. You could skip the hearty greens altogether and just use lettuce, but the vitamin-rich kale will balance out all of those Christmas cookies!
