Beets (1 lb avg), Cabbage, red or green (1 head), Carrots (1 bunch, 1 lb avg), Cauliflower (1 head) or Broccoli (1 lb avg), Collard Greens (1 bunch) or Kale (1 bunch) or Chard (1 bunch), Grapefruit (2 count) or Oranges (5 count), Green Onions (1 bunch) or Fennel (1 bunch), Lettuce (1 head), Sweet Potatoes (1 lb avg)

January 8: Medium Bushel

Super Crunch: Shaved Cauliflower Salad

Bushel Vegetables: cauliflower, lettuce, fennel, cabbage, oranges/grapefruit

You don’t have to roast a head of cauliflower to get the full flavor!  Thinly shave tender cauliflower on a mandolin (or with a very sharp knife) and toss in a zippy lime dressing. If you’re still hanging on to your cabbage or fennel, shavings of the veggies would be a beautiful accompaniment. Need some sweetness? Go for segmented citrus! Recipe Credit: Epicurious


Fantastic Fritters: Crispy Sweet Potato-Green Onion Cakes

Are you just filled to the brim of sweet potatoes? We totally get it- sweet potatoes are so good for you, but cooking them week after week can get pretty monotonous. These crispy Sweet Potato and Green Onion Cakes are a unique dinner idea- crispy on the outside, soft and pillowy on the inside and cook in a shallow fry in only a few minutes. Beet Bowl: Broccoli, Beet, and Kale Brown Rice Bowls with Pesto

We are all about grain bowls in this week’s newsletter, and this Broccoli, Beet, and kale Brown Rice Bowl is no exception! You can buy your own basil pesto, or even whip up your own with the kale instead of simply topping your lunch with the greens.
